Aliv Ladoo Recipe: Halim Seeds Laddoo with Coconut and Jaggery

Tiny aliv seeds, coconut and jaggery, rolled into a little taste of tradition.

Aliv Ladoo Recipe: Halim Seeds Laddoo with Coconut and Jaggery

Tiny aliv seeds, coconut and jaggery come together in these comforting traditional laddoos. Soft, gently chewy and fragrant with cardamom, they make a lovely homemade sweet.
Also known as halim seeds or garden cress seeds, aliv is a familiar ingredient in Maharashtrian kitchens.

Ingredients

Makes - Approximately 12 small laddoos
Soaking time - 4 to 6 hours
Cooking time - Approximately 20 to 25 minutes
Use a standard 240 ml measuring cup.
Aliv seeds - ¼ cup
Water - ½ cup, plus a little extra if needed
Freshly grated coconut - 1 cup
Grated or powdered jaggery - ½ cup
Ghee - 1 tablespoon, plus a little for greasing
Finely chopped almonds or cashews (optional) - 2 tablespoons
Cardamom powder - ¼ teaspoon
Nutmeg (optional) - A small pinch

Method

1. Clean and soak
Check the aliv seeds carefully for grit or tiny stones. Rinse briefly in a very fine sieve.
Add the water, stir, cover and refrigerate for 4 to 6 hours. The seeds should swell and develop a gel-like coating. Add a little more water if any seeds remain dry. Do not drain.

2. Roast the nuts
Heat the ghee in a heavy-bottomed pan. Add the optional chopped nuts and roast gently until lightly golden.

3. Add the coconut and seeds
Add the grated coconut and stir over low heat for 2 to 3 minutes.
Add the soaked aliv seeds with their soaking liquid. Cook gently for about 5 minutes, stirring regularly.

4. Add the jaggery
Add the jaggery and stir as it melts.
Continue cooking over low to medium heat until the mixture thickens into a soft, moist mass. This usually takes another 10 to 15 minutes, depending on the moisture.
There is no need to prepare a separate jaggery syrup or check for a string consistency.

5. Add the flavouring
Switch off the heat. Add the cardamom and optional nutmeg.
Allow the mixture to cool until comfortably warm.

6. Shape the laddoos
Lightly grease your palms. Divide the mixture into 12 equal portions and roll into small laddoos.
Allow the remaining warmth to escape briefly, then refrigerate promptly.

Sukanya’s Super Steps

Soak the seeds until evenly swollen.
Keep the flame gentle to prevent the mixture from catching.
Cool a teaspoon of mixture before checking whether it holds together.
If too wet, cook for a few more minutes.
If too dry, mix in a teaspoon of hot water over low heat.

For a vegan version, replace ghee with coconut oil.

For a nut-free version, omit the almonds and cashews.

Serving Suggestion

Enjoy a small laddoo as a homemade sweet.
When divided into 12 equal portions, each laddoo contains approximately 1 teaspoon of aliv seeds measured before soaking.
This describes the recipe portion, not a recommended daily dose.

Storage

These laddoos contain fresh coconut and soaked seeds, so treat them as perishable.
Refrigerate promptly at 4°C or below and use within 3 to 4 days, or freeze extra portions.
Do not leave them out for more than 2 hours, or 1 hour above 32°C. These are conservative recommendations based on general cooked-food guidance, rather than a tested shelf life for this recipe.

A little coconut, a little jaggery and a lovely taste of tradition!
