Bombay Chapati Sandwich: Easy Leftover Roti Sandwich Recipe

When the packet of bread is missing from the kitchen and you have a few chapatis left over from the previous meal, worry not! This delicious Bombay-style Chapati Sandwich is here to save the day. 😌😋

In our home, chapati sandwiches are usually made by my husband, Yo. Whenever we have leftover chapatis, I simply ask him to turn them into this yummy, layered sandwich.

On those rare and special days when Yo agrees to make something for us, this is one of our favourites! He also prepares an absolutely delicious green chutney to accompany it. I shall share his special green chutney recipe in another post soon.

Filled with vegetables, spicy green chutney and plenty of cheese, this crispy chapati sandwich is a wonderful way to transform leftovers into a completely new meal. It is perfect for breakfast, an evening snack or even a light lunch.

Bombay-Style Chapati Sandwich

Serves: 2–3
Cuisine: Indian
Course: Breakfast or Snack
Diet: Vegetarian

Ingredients

- Leftover chapatis – 4
- Potatoes, boiled, peeled and sliced – 2
- Capsicum, cut into rings – 1
- Cucumber, sliced – 1
- Tomatoes, sliced – 2
- Onion, sliced – 1
- Processed cheese – 1 small block
- Green chutney – 3–4 tablespoons
- Refined oil – 1 teaspoon
- Butter – 1 tablespoon
- Tomato ketchup – for serving

Seasonings

- Chaat masala – according to taste
- Salt – according to taste
- Black pepper – according to taste

Method

Place one chapati on a clean and dry surface. Spread a generous layer of green chutney over it.

Arrange the potato slices and capsicum rings on the chapati. Sprinkle chaat masala, salt and black pepper over the vegetables. Grate some processed cheese on top and cover it with the second chapati.

Spread green chutney over the second chapati. Arrange the cucumber and tomato slices on it, season with chaat masala, salt and black pepper, and grate some more cheese over the vegetables. Cover with the third chapati.

Apply green chutney over the third chapati and arrange the onion slices on top. Season again with chaat masala, salt and black pepper. Grate another layer of cheese and cover it with the fourth chapati.

Heat the refined oil and butter in a wide pan. Carefully place the prepared chapati sandwich in the pan. Cover and cook for about two minutes, or until the bottom becomes golden and crisp.

Using a large plate, carefully flip the sandwich. Return it to the pan and cook the other side until it is equally crisp and golden.

Transfer the sandwich to a chopping board and cut it into wedges using a sharp knife.

Serve hot with tomato ketchup and Yo’s delicious green chutney. Enjoy! 😋
