Eggless Nutella Waffles with Vanilla Ice Cream & Almonds
There are some desserts that look absolutely indulgent but are surprisingly simple to put together and these Eggless Nutella Waffles with Vanilla Ice Cream & Almonds are definitely one of them! ❤️
A freshly made waffle, crisp and golden on the outside and soft and fluffy inside, is delicious enough on its own. But drizzle some warm Nutella over it, add a scoop of creamy vanilla ice cream and scatter some thin almond flakes on top, and suddenly that simple waffle turns into a gorgeous café-style dessert right at home.
And, of course, as with most of the recipes I share on Sukanya’s Musings, this one is completely vegetarian and eggless.
It makes a lovely weekend breakfast when you feel like indulging a little, but I personally think it works even better as a dessert. The contrast of the warm, crisp waffle with the cold vanilla ice cream, gooey Nutella and crunchy almonds is simply irresistible!
So let’s get started.
Eggless Nutella Waffles with Vanilla Ice Cream & Almonds

Ingredients
For the Eggless Waffles
- All-purpose flour (maida) – 1½ cups
- Baking powder – 2 teaspoons
- Baking soda – ¼ teaspoon
- Sugar – 2 tablespoons
- Salt – a pinch
- Milk – approximately 1¼ cups
- Melted butter – 3 tablespoons
- Vanilla essence – 1 teaspoon
- Lemon juice or vinegar – 1 teaspoon
For the Topping
- Nutella – as required
- Vanilla ice cream – 1 scoop per waffle
- Thinly sliced/flaked almonds – as required
- Icing sugar – a little for dusting, optional
Method
Add the all-purpose flour, baking powder, baking soda, sugar, and salt to a large mixing bowl and mix well.
In another bowl, combine the milk, melted butter, vanilla essence and lemon juice or vinegar.
Gradually pour the wet ingredients into the dry ingredients and mix gently until everything comes together.
Do not overmix the batter. A few small lumps are perfectly fine. The batter should be thick but still pourable. If it feels too thick, add a little more milk until you get the right consistency.
Allow the batter to rest for about 5–10 minutes.
Meanwhile, preheat your waffle maker.
Once hot, lightly grease the waffle plates with butter. Pour sufficient batter into the centre, taking care not to overfill the waffle maker.
Close and cook according to your waffle maker's instructions until the waffle is beautifully golden and crisp on the outside while remaining soft and fluffy inside.
Carefully remove the waffle and place it on a serving plate.
Dressing the Waffle
And now comes the best part! 😋
Warm the Nutella very slightly so that it reaches a lovely drizzling consistency.
Generously drizzle it over the warm waffle.
Place a scoop of vanilla ice cream in the centre and scatter thin almond slices generously over the waffle and ice cream.
Drizzle a little more Nutella over the top.
For that final café-style touch, dust very lightly with icing sugar.
Serve immediately while the waffle is still warm and crisp and the vanilla ice cream is just beginning to melt into all that delicious Nutella.
Sukanya’s Tips
- Make sure your waffle maker is properly preheated before pouring in the batter. This helps give the waffles that lovely crisp exterior.
- Avoid overmixing the batter, as this can make the waffles heavier instead of light and fluffy.
- If you are preparing several waffles, don't stack them one on top of another. The trapped steam will make them soft. Keep them separately on a wire rack until you are ready to serve.
- For an extra nutty flavour, lightly toast the almond flakes before scattering them over the waffle.
- Most importantly, assemble everything only when you are ready to eat.
The magic of this dessert is in that combination of a hot, crisp waffle with cold vanilla ice cream slowly melting over it. ❤️
