VADU MAANGA OR MAAVADU (TENDER MANGO PICKLE)

The Vadu Maanga also known as Maavadu in some households is usually prepared at the beginning of the raw mango season. The young baby mango is plucked and pickled as a whole without chopping it. Since the mango is still young it is very tender and once soaked in the spices, entirely absorbs it and starts leaving its own sour liquids into the spices, all this gets suffused and thus we get our famous south Indian pickle the vadu maanga, which tastes divine with curd rice and the water that oozes out of the mango over a period of time mixed with the spices taste so heavenly that u can mix it with rice and some oil and just have it, its absolutely mouth-watering. This pickle is literally oil free except for the 1tbsp oil, if you want you can avoid adding the oil completely.
Ingredients
Young Green mangoes – 20-25 pieces.
Mustard seeds - 8 tsp
Red chillies – 8-10 (please use chilly as per spice required)
Turmeric powder - 1 tsp
Salt - 1/2 cup
1 tbsp of cooking oil.
Method
Wash the young green mangoes, pat dry. Take a porcelain or glass pickle jar or Oorghai Bharani. Put the mangoes in it and a handful of crystalline salt. Keep doing this in layers. One layer of mangoes topped with salt and so on and so forth. Keep the pickle jar closed and shake it twice a day, so that the salt and mangoes mix well. After 2-3 days you will see that the mangoes have shrunk in size or the salt has acted upon the mangoes and made it tender.
Dry Roast the mustard seeds, take a little cooking oil and roast the red chillies till it becomes plump. This removes the raw smell of the red chillies and also gives it a better color. Now grind the mustard seeds, crystalline salt, red chillies and turmeric powder into a thick paste. Mix this paste with the mangoes. Remove from jar and put in an open vessel so that the paste can be thoroughly mixed with the mangoes. Now transfer the mangoes with the masala mixed into the pickle jar. Heat one tbsp oil and allow to cool. Pour this oil on top and close the lid.
For the next 2-3 days shake the mangoes well once every day. Store in air tight containers in refrigerator. This will last for about one year.
Tip: The use of crystalline salt (kallu uppu) is advised as iodized salt darkens the pickle.

It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion. Once this "sludge" reacts with the acid, it will break down and be absorbed by the intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.
AGAR AGAR JELLY
Agar agar is a gelling agent made from a combination of algaes from the species gelidium. The name, agar agar, is Malaysian in origin, and the harvest of the long red and purple fronds goes back hundreds of years. The fronds are freeze dried and dehydrated naturally, producing colorless sheets which are shaped into bars. Agar is available in the traditional bars, flakes, and powder form, all of which can be used interchangeably for gelling purposes. Like the other sea vegetables, agar is a good source of iodine (100 grams agar has 160 milligrams of iodine), as well as some calcium and iron. It has no calories, and according to Paul Pitchford, promotes digestion and weight loss, treats hemorrhoids, and carries toxic and radioactive waste out of the body. It is cooling in nature, and reduces inflammations and other heat conditions as described in traditional Chinese medicine.
AGAR AGAR JELLY
Ingredients
5 g Agar Agar powder
100 g Sugar
500 g Water
1/2 tsp Almond extract / 1 teaspoon vanilla extract (optional)
Method
Put Agar Agar powder, sugar, and water in a saucepan and bring to boil, then reduce heat and simmer, stirring often, until agar dissolves. Pour this mixture onto a plate. (The jelly layer shouldn’t be very thick if you pour onto a bigger plate the liquid will spread and give u thinner slices).Allow it too cool down and then chill in the refrigerator for about 15 minutes until set. Cut the agar agar jelly into cubes. You can cut it into diamond or square shapes as desired.
These cubes can be added to any desserts and enjoyed.

CHINESE GOLD COINS
Ingredients
7-8 bread slices
1 cup noodles(cooked)
3-4 potatoes (boiled)
1 tsp sesame seeds (roasted)
½ tsp Ajino moto
1 tsp soya sauce
½ tsp vinegar
2 tbsp oil
Oil for frying
Method
Discard the sides of the bread and cut one circle from each bread slice with the help of a small bowl, so that all the circles will be uniform and perfectly rounded. Keep the circles aside.
In a wok, heat 2 tbsp oil and mix the boiled, peeled and mashed potatoes, cooked noodles, soya sauce, vinegar and ajino moto.
Mix well and cook over a medium flame for 2-3 minutes. Remove and cool.
On each bread “circle” place a portion of the prepared mixture.
Top with sesame seeds. Prepare all the circles in this way.
In a wok, heat oil to deep-fry the bread circles. When the oil is hot, put in it each bread circle. And fry for only a minute. Drain the excess oil on a kitchen towel and serve hot.

CHEEDAI (SEEDAI)
Ingredients
Rice flour-500gms
Udad flour - 2 tbsps
Butter – 2 tbsps
Asafetida – a pinch
Salt as per taste
Sesame seeds - 4 tsp,
grated coconut - 1 cup (optional)
Oil for frying.
Method
Slightly roast the rice flour in a kadhai(wok). The raw smell must go, Now allow the flour to cool down and add the other ingredients and mix well. Add a little water and knead the flour to the consistency that it can be rolled into balls. Make very small balls using this flour. Deep fry the balls in oil on a low flame. Crispy cheedais will be ready for your snack time. Cheedai is also made during Gokulashtami. You can store the cheedais in an airtight container and enjoy it for a few days.
Note : Adding grated coconut is optional. If you add grated coconut you must finish the cheedai fast but, it’s a bad idea if you intend to store it for a while because the cheedais will soon acquire the flavor of the stale coconut.

The way she used to calculate was very funny as there is a formula for it and mind you that’s in English, it goes like this “ Mother Saw Father Wearing the Turban On Sunday”. Here Mother stands for Monday and the time starts with 7.30 in the morning and the beginning of each alphabet in the formula stands for that day of the week.

1/8th part of each day is termed as the Rahu Kalam (The period of the north node). This part of the day is most inauspicious and should be avoided for all important activities.
Although Rahu kaalam period is considered inauspicious, it is considered auspicious to pray during this time.
It is considered auspicious to light a lemon lamp to Goddess Durga on Tuesdays or Fridays during the rahu kaalam period. It is believed that Goddess Durga fulfills the desires of women.
Goddess Durga is known for protecting girls and women, she is Shakti. The word Shakti in Sanskrit means “ Sacred feminine force”. She is known as Jagatmata (Mother of the World). It is considered very auspicious to pray her.
Women who desire to get married, who desire for a child, women who pray for a happy married life and a long life for their husbands, pray to the Goddess Durga by lighting a lemon lamp during the rahu kaalam period on Tuesdays or Fridays which are believed to be the days of the Devi.
It’s also said that there is a delay in the marriage of many girls as they might have a Rahu dosha. So during Rahu kaalam elders advice to keep the lemon lamp and pray. It is a very effective parihaaram and has worked for many a people. Prayers, I believe have a deep psychological effect of human minds. In the yesteryears when elders gave certain advices to do certain things for God it was also a way of making the person think positive and feel hopeful for happy days to come in their life thereby having a psychologically healing effect on people who are depressed or thinking negatively or facing sadness or grief in their lives. Isn’t lighting a lemon lamp for the Goddess and thereby making time for prayers in our life better than visiting a psychiatrist and taking anti depressant drugs which keep you lethargic through the day.
Step 1: It is believed that 3 Ripe yellow lemons have to be taken and cut into equal halves. When you cut 3 lemons, you get 6 pieces(6 halves), one is offered to Ganapati(Lord Ganesh) who had been given the boon by Goddess Parvati (Shakti and Durga are the forms of Goddess Parvati) that he will always get the privilege of being worshipped first before any Gods and Goddesses. So one piece of the lemon lamp is offered to Lord Ganesha and the remaining 5 pieces to Goddess Durga. We must remember that the number of lemon lamps lit for the Devi have to be always Odd Numbers, so 1, 3 5, 7 or 11 as per how you pray to the Goddess.

He rises twice a day. Once in day and other at night. However, inauspicious time is given 1 hours every day, starting from Saturday (Being son of Saturn)
These things are totally based on personal beliefs and need not be strictly followed unless you are going to have some major event or activity in your life like signing a contract etc.
